Yummy, Healthy Banana Muffins/Cake
I’m not much of a baker, too fussy for me, but I do always get rave reviews on my banana bread/muffins.
It/they are so simple and healthy that by popular demand I am posting my recipe. Please enjoy!
yield 1 loaf or approx 15 muffins
1/2 cup cane sugar 1/2 cup grapeseed oil
2-3 very ripe bananas 1 tsp baking soda
1 cup spelt flour 1 tsp cinnamon
1/2 cup white flour butter (for pan)
1/2 cup flax meal 1/4 chopped walnuts (optional)
1 free range egg 1/4 cup raisins (optional)
1. Preheat oven to 350′F
2. Butter pan, fill muffin pan with paper muffin cups
3. In a small bowl, peel and mash bananas
4. In a medium bowl mix the sugar, oil, and egg until creamy yellow.
5. Blend in the mashed bananas and add nuts and raisins (if desired).
6. Add flours, flax meal, baking soda, and cinnamon.
7. Put the batter into a loaf pan and bake for 1 hour or until tooth pick comes out clean. If making muffins bake for about 20 minutes.

I tried your recipe and it was great! My family loved them. Since I am not a baker (actually, I hate cooking period. I know, what a thing for a mom to say), I am always on the lookout for healthy sugary treats for the family and especially shedding-baby-fat me.
